The panino is an icon of the Italian culture in the world, but most of all a kind of food “designed” to the highest standards.

Guided by Matteo Ragni and Antonio De Marco, the designers of Scuola Politecnica di Design in Milan took the challenge of Panino Giusto with the Accademia del Panino Italiano: designing the rich and complex experience developing around the Italian panino, from the ritual of its making to the moment it is served and tasted.

Features

The workshop Buono e Giusto involved 26 international students from the Master in Industrial Design and gave rise to eight projects summarising the creativity and values of the Italian territory. Through evocative objects the exhibition describes the uniqueness of the Italian panino in the world: an unmistakable experience to savour and remember.

Three are the materials used to shape the products: wood, glass and ceramic, chosen to respect the freshness and naturalness of the ingredients and with a deep concern about the sustainability of the projects.

The students grasp the myth and ritual of the Italian panino from a new and international perspective. Using alternately irony, the power of memory and the objectivity of function, this work tells about a handicraft production that has established itself as an icon of gastronomy and aiming to become, thanks to design, one of the symbols of the Italian lifestyle.

The print of bread engraved in ceramic encourages to observe differences and reminds that every hand-made creation is unique and unrepeatable.

Foodprints is a poetic and functional collection: the ceramic contains and embraces the panino, enhancing its textures and colours while wood reminds of a cutting board and a tray at the same time. Like many excellent examples of taste, now even the Italian panino has its own dedicated serving dish.

The function of this ironic kneeler is celebrating the ritual of the Italian panino. An object that sanctifies the pleasure of food and reminds of the sacredness of tasting.

Eat, Pray, Love is a ritual that transforms an ordinary experience into an introspective moment as well as a tasting one. Bags and phones are left behind to kneel down in front of the dish and enjoy the panino, focusing on the moment and on the perfect alchemy of flavours.

A master of design and of the art of combination who loved to turn daily objects into projects enduring over time. Achille Castiglioni is the compass and the inspiration for this small installation evoking the delicacy of natural things along with the art of game and handicraft knowledge.

A homage talking about a universal recipe, also good for flavour creations: putting the ingredients together, giving life to a ritual, creating compositions that constantly evolve just like nature, represented by the olive tree climbing up the structure.

The experience of food can be expressed both as a banquet and as a more intimate and private sphere. Cocoon is a small, portable architecture transforming the environment.

When it is open it helps share the meal with other table companions increasing comfort and sociality; when it is closed it offers a private bubble allowing to isolate and protect oneself from curious glances and eat without hurry or embarrassment.

A tool that plays recreating the key value at the basis of the Italian panino: the balance of its ingredients. A delicious panino that tastes right – buono e giusto – results from the careful combination of craftsmanship, creativity and tradition.

This balance then encourages to find the perfect composition of mastery, territory and creativity. Like in the Italian panino, what it takes to centre the bubble of culture is only the essential, not the superfluous.

Reflection, observation, discovery. The project provides an innovative point of view on the act of eating: your own. A series of mirrors placed around a table, a simple dish suspended in the middle of the installation to house the panino.

The mirrors reflect the image of the person while eating and allow them to read some hidden keywords spreading knowledge on the values embodied by each panino.

The panino results from a complex overlapping of layers: the various ingredients give out the flavours of the territory and show the mastery of the composition, while bread is the binder giving it structure and stability.

This sculpture-lamp generates from a similar layering process and finds its meaning in the values of the Italian panino enhanced by the light effects of the structure.

Extending the experience of taste to a different sensory level. Four food essences concealed behind precious cruets can recreate the invisible wonder enclosed in a panino.

The containers remind of the tools of an alchemist and don’t affect the perception of the content, the inner scent.
